The Balvenie and Bovine Wine Club Host a Rarefied Dining Experience in Toronto
What happens when a legendary Scotch distillery joins forces with Toronto’s most exclusive wine club? A whisky-paired dinner as rare (and refined) as the Scotch itself.
Hosted by The Balvenie, a distillery renowned for its handcrafted approach, and Bovine Wine Club, Ontario’s first private wine club and storage facility, the May 21st dinner promises craftsmanship from the cask to the kitchen. Bovine Wine Club offers VIP access to rare bottles, the expertise of top sommeliers, and exclusive perks from its sleek location at Union Station’s Blue Bovine Steak + Sushi House.

For one night only, guests will be treated to a five-course tasting menu at the Bovine Wine Club space, with each dish paired to a unique Balvenie pour. The menu comes courtesy of Chef Sean Blomeley and Executive Sushi Chef Yi Joo Na of Blue Bovine, known for high-impact flavours and upscale Japanese-inspired cuisine.
The Menu
It all begins with the “Double Bubble”— a complex welcome cocktail crafted by World Class Global Bartender of the Year Jacob Martin using The Balvenie DoubleWood 12 Year Old, aged rum, amaro, and a Japanese maple leaf. “The Balvenie’s depth and elegance offer endless inspiration behind the bar,” Jacob Martin, Bovine Wine Club’s Beverage Director says. “Every pour brings craftsmanship and character to the glass. It makes my job easy.”



From there black truffle risotto with the malty Sweet Toast of American Oak, scallops with chorizo crust alongside the honeyed Caribbean Cask 14, and beef Wellington paired with the silky PortWood 21. For dessert? A dark chocolate torte matched with The Balvenie’s rare 25 Year Old, full of vanilla, honey, and a hint of ginger.
“Each whisky unlocks a new layer of flavour in the dish,” says Chef Blomeley. “It’s a true conversation between spirit and plate.” For The Balvenie, known for growing its own barley and employing on-site coopers and coppersmiths, it’s just another way of celebrating its time-honoured devotion to craft.
