The Dalmore Cask Curation Lounge Arrives in Toronto

Tucked into a special corner of the LCBO flagship Summerhill location hides an experience with few rivals. The Dalmore has built out its own little private tasting lounge, offering the public the opportunity to stop, relax, and sip a curated selection from the brand’s rich whisky portfolio (on select dates, listed below). Why, you might ask? Well, the pop-up is aligned with the arrival of its Cask Curation Series: The Sherry Edition. One of the brand’s rarest offerings, of 150 sets produced for global offering, only two examples of the set have made it to the Canadian market, one of which rests on display in this new lounge installation.

We’ll forgive you if you’re staring at your screen and thinking “what on earth is a Cask Curation Series”. Part of a brand new initiative from The Dalmore that kicks off with The Sherry Edition, a trio of matured whisky expressions that pay homage to the century-old exclusive partnership with the finest winemakers of Jerez de la Frontera – Gonalez Byass. The casks are selected by The Dalmore’s whisky makers, with specific eyes on having the best potential for maturing whisky.

The Sherry Edition features three whiskies born of casks that between them represent 80 years drenched in Gonzalez Byass wines. The set includes the 26 Year Old, finished in rare Gonzalez Byass 2002 vintage, Cask No.4; the 28 Year Old, finished in very rare Gonzalez Byass 30 Year Old Matusalem Sherry Cask; and the 43 Year Old, finished in very rare Gonzalez 30 year old Apostoles Sherry Cask. A small sip of the latter was passed around for guests to try on opening night; it did not disappoint.

An opportunity for a sampling rare as this doesn’t come across our borders often, and we don’t doubt the Curation Lounge will be a busy spot through til its closure at the end of October. The lounge will be providing visitors a curated taste of Cask Curation through a series of events including consumer tastings, complimentary bottle engraving, and dinners. Having sampled the menu during yesterday’s launch event, we can assure you it’s worth hustling to get on that list.
